No-Cook Shrimp and Mango Summer Rolls with Peanut-Lime Dipping Sauce

Jump to recipe
Quick answer

No heat needed. Stir together a peanut-lime sauce, slice the vegetables, mango and herbs, then soften rice paper wrappers one at a time in a dish of cool water. Fill each with chilled cooked shrimp and fillings, roll tight, and serve with the sauce in about 40 minutes.

As much as we try, we're not food photographers. This is an illustrative image for context. We don't have real photos for every recipe. Cooked this one? Send us your photo and we'll credit you.

Summer rolls are a Vietnamese street-food favorite, and they suit camp well. There is no stove, no oil and no hot pan. You just need a cutting board, a dish of water and a cooler.

The wrappers are the only tricky part. They go from stiff to sticky in seconds, so set up a rolling station before you start. Your first roll will be a bit messy. By the fourth, you'll be rolling like a pro and handing out snacks to everyone nearby.
