Quick answer

No stove or fire needed. Stir peanut butter with honey and cinnamon, spread it on tortillas, then add sliced banana, granola and dried cranberries. Roll tight and eat. It takes about 10 minutes from start to finish.

As much as we try, we're not food photographers. This is an illustrative image for context. We don't have real photos for every recipe. Cooked this one? Send us your photo and we'll credit you.

These roll-ups are for the morning you don't want to light anything. Everything except the bananas is shelf-stable, so you can build them with no cooler and almost no cleanup. They also travel well in a daypack.

The trick is the spread. Honey and cinnamon stirred into peanut butter makes a sticky glue that holds the banana and granola in place. You get a roll-up that stays together instead of shedding crumbs down your jacket.

Gear you'll need

  • small mixing bowl
  • spoon
  • sharp knife
  • cutting board or large plate
  • reusable container for leftovers

Steps

  1. Wash and set up

Wash your hands and clear a clean, flat surface like a camp table or a large cutting board. Set out the tortillas, bowl and knife.

  2. Mix the spread

In a small bowl, stir together the peanut butter, honey, cinnamon and salt until smooth. If it's stiff in cold weather, stir longer or set the jar in the sun for a few minutes.

  3. Spread the tortillas

Lay out as many tortillas as you can fit. Spread about 1½ tablespoons of the peanut butter mixture over each one, leaving a 1-inch bare edge.

  4. Slice the bananas

Peel the bananas and slice them into coins right on the board. Do this just before assembling so they don't brown.

  5. Layer the filling

Line banana coins down the center of each tortilla. Top with a big spoonful of granola and a few dried cranberries.

  6. Roll them tight

Fold in the two short sides, then roll from the long edge, pressing as you go. The spread on the bare edge will help seal it.

  7. Slice and serve

Eat them whole, or cut each in half on a diagonal. Build the rest the same way and eat within about 30 minutes.

Trail Notes

Pack it

Everything but the bananas is shelf-stable. Keep the tortillas sealed and out of direct sun, and use the bag within a few days once it's open. Carry the bananas on top of your pack, not underneath it.

No cooler

You don't need one. Peanut butter, honey, granola and dried fruit are all fine at air temperature. In hot weather, keep the tortillas in the shade and eat any assembled roll-ups within an hour.

Swap

Use sunflower seed butter for a nut-free version. You can also swap the bananas for sliced apples or a handful of raisins.

Leave no trace

Pack out banana peels, granola crumbs and wrappers. Scrape the bowl and spoon with a paper towel and carry that out too, so your dishwater stays free of food scraps that attract animals.

Campers ask

Can I make peanut butter banana roll-ups ahead of time?

You can mix the spread at home and carry it in a jar. Assemble the roll-ups at camp, because the bananas turn brown and the tortillas go soggy if they sit overnight.

What's a good no-cook breakfast for camping?

Wraps and roll-ups with shelf-stable fillings like nut butter, granola and dried fruit are easy. They need no heat, no cooler and almost no water for cleanup.

How do I keep bananas from getting mashed while camping?

Pick firm bananas that are barely ripe and pack them on top of your gear, or in a hard container. Slice them right before you build the roll-ups.
