Campfire Skillet Nachos with Seasoned Beef, Black Beans and Pickled Jalapeños
Brown the beef with onion in a 12-inch cast-iron skillet over medium coals or a medium-high stove burner, then stir in spices and black beans. Layer chips, beef and cheese twice in the skillet, cover, and heat over medium-low heat for 5 to 7 minutes until the cheese is melted. Top with tomatoes, jalapeños, scallions and sour cream. It takes about 40 minutes total.
Camp nachos are easy to get wrong. Pile everything on top and the chips underneath stay dry and plain. This version builds two layers, so cheese and beef reach every chip, even the ones at the bottom.
It's one skillet, pantry spices and a cooler's worth of toppings. Cook the beef first, build the pile, melt it under a lid, and set the skillet in the middle of the table with forks. Expect people to hover.
