Cast-Iron Cuban Frita Burger with Chorizo, Potato Sticks and Smoky Sauce
Mix ground beef with raw chorizo, grated onion and smoked paprika, then shape four patties. Cook them in a hot cast-iron skillet over medium coals or a medium camp-stove flame for about 12 minutes until they hit 160°F. Serve in butter-toasted rolls with a quick smoky ketchup sauce, lime onions and a pile of crunchy potato sticks. Total time is about 30 minutes.
The frita is a Cuban street-style burger. The patty is beef mixed with chorizo and spices, and it gets piled with crunchy shoestring potatoes. The chorizo adds paprika, fat and a little heat, so you need very few other ingredients.
It cooks in one skillet in about 15 minutes. The potato sticks come straight from a bag, which keeps camp cleanup low. Mix the patties at home and this is a fast dinner after a long drive.
