Car Camping Low-Country Boil with Shrimp, Smoked Sausage, Corn and Potatoes for a Crowd
Boil seasoned water in a big stockpot on a propane burner, then add potatoes for 12 minutes, sausage and corn for 5, and raw shrimp for 3 to 4 until pink and opaque. Drain, dump onto a paper-covered table and serve with garlic butter. It takes about 65 minutes and feeds 8.
A low-country boil is the easiest way to feed a whole campsite. One pot, one burner, no plates needed. Everything cooks in order, and then you pour it out on the table and everyone digs in.
The work is in the timing and the safety. Keep the shrimp on ice until the last few minutes, and keep the raw bag away from everything else. Lift the pot carefully when it's full of boiling water. Done right, this is the dinner people talk about all week.
