Campfire Dutch Baby Breakfast Puff with Lemon, Berries and Maple
Shake the batter in a jar and let it rest while your coals burn down. Preheat a buttered 12-inch Dutch oven with about 9 coals under it and 15 on the lid for 8 to 10 minutes, then pour in the batter and bake covered for 18 to 22 minutes until puffed, golden and set in the middle. Top with lemony berries, powdered sugar and maple. It takes about 45 minutes once the coals are going.
A Dutch baby is a big, eggy pancake that puffs up the sides of a hot pan. It's the easiest showy breakfast you can make at camp. There's no flipping and no standing over a griddle. You shake a batter, pour it into hot butter and put the lid on.
The puff is dramatic, but it falls within a few minutes, so get everyone to the table first. The tart lemon and berries cut through the buttery middle. A pour of real maple finishes it. It feeds four people who aren't in a hurry.
