Griddle Sausage Pancake Dippers Kids Love with Maple-Mustard Dip

Jump to recipe
Quick answer

Brown breakfast sausage links on a camp griddle or big skillet over medium heat until they reach 160°F, then slice them into coins. Spoon pancake batter into small rounds on a buttered griddle over medium-low heat, press in two sausage coins each, and flip when bubbles pop, about 2 minutes per side. It takes about 50 minutes total and the dippers go with a quick maple-mustard dip.

These are pancake-sausage bites, small enough for a kid to eat with one hand and dunk in syrup with the other. No fork, no plate-sized pancake sliding off a paper plate. You get the sweet and salty combo kids already like, in a size that cooks fast.

The batter comes from a dry mix you bag at home. At camp you add milk, an egg and melted butter and whisk. The dip is just maple syrup with a little mustard. Put plain syrup in a cup for anyone who wants it plain.

Gear you'll need

  • Camp griddle or 12-inch cast-iron skillet
  • Camp stove or fire grate
  • Large mixing bowl
  • Whisk
  • Spatula and tongs
  • Cutting board and knife
  • Instant-read thermometer
  • 2 small bowls for dip
  • Measuring cups and spoons

Steps

  1. Brown the sausage

Heat a griddle or large skillet over medium heat. Cook the links, turning often, for 10 to 12 minutes until browned and 160°F inside. Move them to a clean plate, not the one that held them raw.

  2. Slice into coins

Let the links cool for 2 minutes. Cut each into 4 coins, about 48 total. Cover them to keep warm.

  3. Whisk the batter

Pour the pre-mixed flour, sugar, baking powder and salt into a big bowl. Add the milk, egg and 2 tbsp melted butter, then whisk until just mixed. A few lumps are fine.

  4. Butter the griddle

Wipe the griddle with a paper towel, then lower the heat to medium-low. Melt about 1 tbsp butter across the surface.

  5. Pour and press

Spoon 2 tbsp of batter per round, leaving a little space between them. Press 2 sausage coins into the top of each right away.

  6. Flip and finish

Cook until bubbles pop and the edges look set, about 2 minutes. Flip and cook 1 to 2 minutes more until golden. Rebutter and repeat, keeping finished dippers covered.

  7. Stir the dip

Mix the maple syrup and mustard in a small bowl. Pour a little plain syrup into a second cup for anyone who wants it plain. Serve the dippers warm.

Trail Notes

Make ahead

Bag the flour, sugar, baking powder and salt at home. You can also cook and slice the sausage the night before and chill it, then rewarm it on the griddle for 2 minutes. Keep raw sausage, milk and eggs at 40°F or below and use the sausage within 2 days of packing.

Swap

Press in blueberries, mini chocolate chips or diced ham instead of sausage. Fully cooked sausage links work too, but heat the coins until steaming hot.

Raw-meat handling

Wash your hands and the tongs after touching raw sausage. Use a clean plate for the cooked coins. Check one thick link with a thermometer to be sure it hit 160°F.

Leave no trace

Wipe the griddle with a paper towel and pack out leftover grease. Strain dishwater and scatter it at least 200 feet from water and campsites.

Campers ask

Can I make sausage pancake bites on a campfire?

Yes. Use a grate over a bed of medium coals, not open flames. Keep the heat low enough that the butter foams but doesn't brown fast.

How do I keep pancakes from burning at camp?

Use medium-low heat and wipe the griddle between batches. Pull the pan off the heat for a minute if the first batch browns in under a minute.

Can I use pancake mix from a box?

Yes. Use about 2 cups of complete mix with the water the package calls for, and skip the egg and milk. Scratch batter just tastes a little better and bags easily.
