Dutch Oven Khachapuri Breakfast Boat with Feta, Mozzarella and Runny Eggs
Mix a quick yogurt dough, shape it into a boat, fill it with mozzarella and feta, and bake it in a 12-inch Dutch oven over about 7 coals underneath and 14 on the lid for 18 to 20 minutes. Pull it, press a well into the cheese, crack in two eggs, and bake 4 to 6 minutes more until the whites are set. Plan on about 30 minutes of prep and 30 minutes of baking, plus time to light coals.
Khachapuri is Georgia's famous cheese bread boat. The classic Adjaruli style is filled with melty cheese and topped with an egg and a pat of butter. You tear off the crust and swirl it all together in the middle. It is a rich, salty breakfast that suits a slow morning at camp.
This version uses a yogurt dough with baking powder, so there's no yeast and no long rise. A Dutch oven with coals above and below works like a small oven and gives you a golden crust and fully melted cheese. Light your coals first, then make the dough while they heat.
